"Béton," derived from the French word for concrete, describes our method of fermenting this Chardonnay in a cement egg. This approach encourages a purer Chardonnay expression, enriched by extended lees aging and without the influence of oak. This wine presents a delightful bouquet of floral notes, including honeysuckle and orange blossom, complemented by hints of lime zest, linden, lemon chiffon, and honeydew melon. On the palate the wine is expansive and lush with bright apricot and peach, all culminating in a refreshing, shimmering finish.
